The Science Behind the Pineapple

Before we get into the different types, let’s talk about what a pineapple really is.

The pineapple (Ananas comosus) is not just one fruit—it’s actually a collection of small berries fused together to form a single, large fruit. Every little hexagon on its skin is a separate berry! This unique structure gives pineapple its distinct look and texture.

Pineapples belong to the Bromeliaceae family and take about 13 to 14 months to mature. That’s a long wait for something that disappears so quickly when sliced!

Pineapples grow well in many parts of Ghana, especially in the southern regions, where moisture levels are ideal. The two most important factors for successful growth are temperature and rainfall. Pineapples thrive in temperatures between 20 to 36°C and require between 600 to 4,000mm of rainfall per year. Interestingly, they can also use dew as a moisture source, making them surprisingly resilient.

Pineapple Cultivation in Ghana

Ghana has been cultivating pineapples for decades, with production concentrated in the southern sector of the country. Until recently, the Smooth Cayenne and Sugarloaf varieties dominated the market, but the introduction of MD2 has gained popularity. However, MD2 has faced some challenges adapting to Ghana’s climate.

Globally, there are five major pineapple cultivars: Cayenne, Spanish, Queen, Sugarloaf, and Perolera. However, Ghana mainly cultivates Sugarloaf, Smooth Cayenne, MD2, and Queen.

Sugarloaf Pineapple – “The Sweet One”

Sugarloaf, affectionately called Fante Fante in Ghana, is mostly grown in the Central Region. It has a cylindrical shape and is smaller than the MD2 variety, though some Sugarloaf pineapples can grow to surprising sizes.

This variety matures in 12 to 18 months, producing extremely sweet and juicy fruit. Its outer rind is thin and remains green even when fully ripe, with golden yellow flesh inside. A ripe Sugarloaf pineapple can weigh up to 2kg.

One thing to note: unripe Sugarloaf pineapples are highly acidic and can cause irritation in the mouth. Always wait until they are fully ripe before eating them. Also, be careful when handling Sugarloaf pineapples—their leaves are edged with sharp spikes that can cause painful cuts.

Smooth Cayenne – “The Juicer’s Favourite”

Often referred to by farmers as local, Smooth Cayenne is one of the most widely cultivated pineapples in Ghana. Unlike Sugarloaf, it has a rounder shape and larger size. Fully matured Smooth Cayenne pineapples can weigh up to 3kg.

What makes this variety stand out is its high juice yield, which is why many juice producers prefer it. It’s one of the best pineapple varieties for juicing in Ghana. However, Smooth Cayenne is not as sweet as Sugarloaf and tends to have a slightly watery taste.

A great way to get the best of both worlds is to blend Sugarloaf and Smooth Cayenne when making juice. This mix gives you both sweetness and quantity—a winning combination!

MD2 – “The Golden Star”

The MD2 pineapple is a scientifically developed variety created by Del Monte to be sweeter and more uniform in size than traditional pineapples. It has a rich golden colour that makes pineapple juice look extra appealing. This makes it also one of the best pineapple varieties for juicing in Ghana.

One interesting thing about MD2 is that its juice tastes sweeter than the actual fruit, which is not common with other varieties. This makes it a fantastic choice if you want bright yellow juice with an enhanced natural sweetness.

Queen Pineapple – “The Baby One”
